Year 12 students learn to fillet flat fish in Leiths workshop
Year 12 Leiths students had a visitor on Tuesday, their assessor from Leiths, who taught them how to fillet a flat fish using the lemon sole from Gurneys in Thornham.
They made the fish into goujons, accompanied by some arancini that they made out of some leftover risotto from a previous lesson, some tempura green beans, parsnip crisps and a tartare sauce made from their own mayonnaise.
